3. Beijing Gongbao Chicken Ding
Kung Pao chicken is a famous traditional dish with Chinese and foreign characteristics, which is included in Shandong cuisine, Sichuan cuisine, Guizhou cuisine, and Beijing cuisine. It was originally Shandong cuisine, called fried chicken in oil. Because it was first created by Ding Baozhen, the governor of Shandong in the Qing Dynasty, and Ding was once called "Prince Shaobao" (also called "Kung Pao"), people renamed it "Kung Pao chicken" after Ding. Later, Ding Baozhen was appointed as the governor of Sichuan and brought this dish to Chengdu, Sichuan. After being processed and transformed by Sichuan chefs, the recipe became more refined, and the quality improved. Later, it was presented as a tribute dish to the emperor by officials in Sichuan and developed into a famous dish for imperial use. This dish is also classified as Beijing court cuisine, with slightly different cooking methods in different regions.
